Truly Memorial Buffalo Chicken Pizza

If you want a Memorial day you will remember, make this pizza.

IT. IS. AMAZING.

My wife gets all the credit for this one.  This was her idea.  She was recently dieting and was dreaming of all the wonderful things she would eat when she was finished.  This was one of those great ideas and it turned out better than we could have imagined.

This is super easy to make, and you simply  must make it.  Trust me on this one.

OK, lets get started.

Ingredients:

  • Chicken
  • Pizza dough from Trader Joe’s (didn’t have time to make my own a day before)
  • Blue Cheese
  • Shredded 4 cheese blend: Mozzarella, smoked Provolone, Asiago, Romano
  • Ranch dressing
  • Franks Red Hot wing sauce (this stuff is the real deal)
  • Butter
  • Garlic
  • Salt & Pepper

First things first.  Cut up the chicken into thumb size chunks.   Don’t cut your thumb into a thumb sized chunk.

Pour a bit of the Franks wing sauce into a pan and throw the chunks of chicken in.

Add a pinch of salt, pepper and diced garlic or garlic salt.  Stir it up so it can marinade in the sauce.

cut up a half stick of butter and throw it in as well.  Cover the whole thing and throw it in the fridge.

Also now make up the ranch dressing per the instructions and throw it in the fridge as well so it can set up.

Now go running for 3.8 miles.  You are about to eat the most amazing pizza with 5 kinds of cheese, and ranch dressing.   Go running now.

That’s what I did.  If you are lazy you can just let it marinade for about an hour or so.

How was the run?

Ok now we are going to prep the pizza dough.  But while we are doing this, we need to start the chicken cooking.  Preheat the oven to 450 and throw the chicken in while its heating up.  Also put your baking/pizza stone into the oven while its heating up.

With the chicken in the oven, and the oven pre-heating, lightly sprinkle some flour on your work surface and get out the pizza dough.

Throw it on the lightly flour-ed surface and let it rise for 20 minutes.

When 20 minutes is up, take your chicken out of the oven and set it aside.

Time to roll the dough.  I look like I know what I’m doing here, so lets just pretend I do.

Notice the rolling pin?  You want to roll out the dough into a 12 inch-ish round pizza shape. I don’t have a pizza stone and my baking stone is square so I went with a square shape.

Now grab your baking/pizza stone out of the oven.  Careful, its really freaking hot!

Slide the dough onto the stone and start building your masterpiece.  Drizzle with a little bit of olive oil.

Throw on your chicken that smells amazing.

Grab a hunk of blue cheese and crumble it up.

Throw the crumbles around the chicken.   The blue cheese is amazing and makes this pizza awesome.

Now take some of the franks and spread it all over the chicken and blue cheese.

I used about what you see in the picture.

Top it all with the shredded 4 cheese mix.   I used about 2 handfuls.

Its now ready for the oven.   Throw it in the oven for 7-8 minutes until the cheese is bubbly and just starting to brown.

Should look like this.  Amazing right?  I know!  But you are not done yet.  There is one more final touch that makes all the difference.

Here is the final touch.  Remember that ranch you made earlier?   Go get it and grab the Franks wing sauce too.

Drizzle both on top in a very beautiful spiral shape.  Throw it back into the oven for 1 more minute.

Seriously, how amazing does that look?

You might be thinking, “he sure uses the word ‘amazing’ way too much” but you will change your mind once you make this pizza.
