Bruschetta is awesome…and easy to make
My tomatoes have attacked. They are amassing in large numbers in my garden and there is no way to stop them. I clearly planted WAY too many tomato plants, but hey, whats done is done, so lets eat them.
I love bruschetta and we were going to a party so I though it would be an easy side dish to bring and enjoy.
You will need:
- Tomatoes
- Basil
- Garlic
- Onion
- Olive Oil
- Bread
This is super easy so I’m going to go quick.
chop up tomatoes into little chunks.
Get a good bread knife like this…
and make your bread look like this…
get your garlic cloves ready to work
scrape garlic all over the bread and lay it out on a baking sheet like so. Take the rest of the garlic and chop it up real good.

add in the garlic
and the chopped up basil
add olive oil
stir stir stir. I also added a bit of white onion, but just a bit.
You are going to toast the bread in the oven until they are golden brown.
Remove from the oven, grab a spoon and toss a big scoop on the toast. Then eat another one, because they are awesome. Have someone near by to stop you from eating all of them.
