Slow cooked pork shoulder

I often don’t cook the healthiest of recipes, as evidenced by this, this or this, but thats OK.  Thats what diets are for.

I’m back on the slow carb diet, which I do occasionally to shed some pounds so I can make more of these.  I’m back on the diet because I’m reading Tim Ferris’ new book the The 4-Hour Body.

I met Tim out at SXSW several years ago right has he was launching his The 4-Hour Workweek book.  I liked the book and hit it off with Tim.  I had him come out and speak at my company and I’ve enjoyed his work ever since.

The slow carb diet he originally blogged about is a very simple diet and he goes into much more detail in his new book.

Basically you avoid anything white, any carbs, and eat a lot of protein, vegetables, and legumes.  And one of the keys to the diet is to repeat your meals and eat the same thing over and over.

So for that I set out to create a really easy pork shoulder recipe, and it turned out to be one of the easiest and tastiest things I’ve ever made.

So If your looking for a great easy recipe that tastes awesome and you can eat all the time on this diet, look no further.  It will take you less than 5 minutes to prep and then you just put it in the crock pot and let it go.


I’ve not cooked a lot of pork shoulder before, because I never knew what to do with it.  I previously made some awesome al pastor tacos with it and fell in love.  This recipe is even easier.


First you’ll need a pork shoulder.  You can get this at any grocery store.


Next you’ll need some spices.

  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crumbled dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon (optional.  I love it, my wife not so much)
  • 1 (4 pound) boneless pork shoulder roast
  • 2-3 bay leaves
  • 2 cups chicken broth


Mix all your spices together.


throw 2-3 bay leaves into the bottom of your crock pot.


rub half the spices on once side of the pork shoulder


Place that seasoning side down and pour the rest of the seasonings on the other side.   Pour in the chicken stock around the sides of the meat.


And you cook it for 5 hours, flip it over, and then cook it for another 5 hours all on the low setting of your crock pot.


Seriously, how easy is that?  When its done, it will be fall apart tender with a fork.  Simple shred the pork with a couple forks to eat.


For the 4HB diet its great to have meals ready to go, so put it in a tupperware container and you are set for many happy meals with this tasty meat.


And my dog LOVES the pork shoulder bone, so we are all happy with this recipe.

That’s it.  This recipe is so easy to make and store so you can eat this whenever you need to while on your diet.

The other great thing about the diet is you get a cheat day once per week, so go nuts.

Giving up fear for lent

This year I’m giving up fear for lent.

I’m not Catholic, but I like the idea of lent.  Each year my wife and I usually give up some of the same things as in years past; soda, TV etc.

This year I thought more about it as I already don’t drink soda, and the TV is always a nice thing to do without to reset for a while, but I was searching for something else.  Something bigger…

So I’m giving up fear…


I told my wife this, and she chuckled, “but you aren’t afraid of anything!”   And thats true for a lot of things, but its not 100% accurate.

In 4 days I’ll be without a job.  I’ve been winding down my work with a great company, and as of the 15th I’ll be unemployed.  Well unemployed in the technical sense.   This time I’ve decided to take this opportunity to start my own businesses.  Yes, plural; multiple businesses.  And that is really scary.

I can easily overwhelm myself with the amount of details and minutia that comes along with choosing that path.  But for the next 40 days I’m giving all of that up.

I won’t let fear paralyze my progress.

I won’t let fear stop me from pursuing this dream.

I won’t let fear tell me that I don’t know what I’m doing.

I won’t let fear stop me.

And the thing is, as I write these words and look at the list above its clear to me that its all bullsh*t.   I know I’ll be fine. In fact I know I’ll be much better than fine.  Without fear I’ll move forward.  Without fear I’ll figure it out.  I always do.

1-A-Weel: Week 10 – A crystal serving platter

In the veign of last week’s 1AW and the fact that you can sell ANYTHING on eBay, I found a real treasure for this week’s 1AW.

I’ve been married 12 years.

I think I got this crystal chip and dip set as a wedding present.  I don’t remember.   But I can’t imagine a scenario where I went out to buy such a thing.  I also don’t ever remember using it, but its missing the bowl that goes with the serving tray, so maybe it was used once.   Who knows.

Here’s what I do know.  I found this thing sitting in my garage on top of my refrigerator, and I think its been there for at least 10 years by the amount of dust collected on it.  So this week it goes up on eBay to some lucky individual who needs/wants a crystal serving platter minus the bowl that is supposed to go with it.

1AW is a project by which I’m getting rid of at least 1 thing each week that I do not need, want, or use anymore.  Doing at least one thing per week helps me reduce the clutter in my life and make room for what is truly important.

Urban Farming Guys

I was going to go to bed early, then I found this…

These guys are on an amazing and inspiring journey that I am eager to watch and learn from.

From their website

We are about 20 families who have purposefully uprooted from out of their comfortable suburban homes and moved into one of the worst neighborhoods in Kansas City.  We bought homes within a 5 block radius of each other and we put down our stake for the sake of the youth and the poor.

These guys are doing all the cool projects I’d love to get into.  I can’t wait to watch more videos from them and learn more about this project and try to replicate some of what they are doing in my neighborhood.

Rescued Baby Hummingbird

I’m on a role with the cute videos…

My wife once rescued a crow as a child that was stranded in her backyard. They kept it in a box and fed it worms and bugs. I think this might be a little cuter.
