Tomorrow is the first…

Dec 31, 2012 by

Tomorrow is the day we pick to reset our year.  We celebrate the year that was and look forward to a new year of new possibilities.  2012 was amazing, but I think 2013 can be even better.  There is always room to grow.  There are always new challenges to take on.  There are things we can do to make our lives and the lives of those around us better.  So lets do that.

I hope you take some time today to be with friends and family and enjoy some great company and talk about the great memories of 2012.  I also hope you’ll join me in starting off 2013 with some great new ideas and simple ways that we can make our life better.

If 2012 was rough for you, this is a good opportunity to put it behind you.  Let today be the last day you think of the things that are holding you back.  Let the new year be a new slate for you and an opportunity to move forward with your dreams and not look back at the things holding you down.  The past is past.  It’s done.  It happened.  It’s over.  Its now time to live a full and happy life.  Let 2013 be your year.

Please join me tomorrow for the first of many simple challenges aimed to make your life better.

It’s just that simple

Happy New Year everyone!

Merry Christmas

Dec 25, 2012 by

I want to wish you all a truly merry Christmas.

I hope you will take the day to be with friends and family, eat wonderful cookies, drink awesome eggnog, and spread the Christmas cheer around.

This has been a rough year for some out there, so this Christmas, kiss the kids, hug the adults, snuggle with the animals and remember the good things in your life.  Think of the great things you have in your life and give to others who need a little help when you can.

Merry Christmas

Thank you for all your support of TrulySimple.  I appreciate all the great feedback and input and hope you will join me next year in making this world a better place one simple step at a time.

You’re still here and the world still turns. So now it’s time to fix it.

Dec 22, 2012 by

You survived the apocalypse, which means you can do anything.

The world keeps turning, and you are still here, so now its your turn to help make it a better place and improve your life at the same time.  I am creating a simple program to help you do just that, but I need your help.  I need to know how I can better help you. I’ve created this very short and easy questionnaire to help me know how I can help you more.

Its only 15 questions and will only take you a couple of minutes to finish. Please take a second and help me help you and let me know what you think.

This questionnaire is completely anonymous.  Be honest and have fun.

Puerto Rican Eggnog

Dec 16, 2012 by

**CAUTION**

**ADULTS ONLY**

**PROCEED AT YOUR OWN RISK**

**UNDER NO CIRCUMSTANCES SHOULD YOU CONSUME THIS BEVERAGE AND OPERATE A VEHICLE OF ANY KIND**

**DRINK RESPONSIBLY**

OK, with those disclaimers out of the way, this is a very good holiday eggnog recipe that is always a hit at parties, but in addition to all the warnings above, be careful with this one. This drink is sneaky.  It looks delicious, it tastes sweet and smooth, but it will absolutely get you drunk from the first sip. I am not a big drinker, but this will get you there quickly.

Have fun, but drink responsibly.  Here’s how you make it.  Super simple.

IMG_0255

This is what you will need:

  • 8 3-inch cinnamon sticks
  • 2 cans of coconut milk
  • 3 cans of evaporated milk
  • 3 cans of sweetened condensed milk
  • 2 cups of water
  • 6 Large egg yolks
  • 3 cups of white rum

This makes a big ~4 quart big party batch size.  You can cut it in half for a small party size.

IMG_0272

Boil the water and cinnamon sticks in a 2-quart pan. You want to reduce the temperature to Medium after it has started boiling.

IMG_0280

It will continue boiling and once it’s down to one cup of liquid, you can remove heat and the cinnamon sticks. Then let it cool to room temperature.

IMG_0294

In a 3-quart pan, mix the egg yolk and evaporated milk with a whisk at LOW temperature. Make sure to be constantly stirring it for about 10 minutes until it thickens (you can check with a spoon, once the spoon is coated, then it’s good to go). Make sure it doesn’t boil!!! Then put it aside and let it cool slightly.

IMG_0302

Once the cinnamon/water mixture is cool enough, add the coconut milk and mix it well.

IMG_0318

Then take that mixture and add it to the egg/milk mixture and mix well.

IMG_0287

Then you can add the condensed milk

IMG_0346

Add a sprinkle of ground cinnamon now.

IMG_0352

Stir it up for fun patterns

IMG_0353

You get this awesome freckled texture to it.

IMG_0356

Now its time to add the rum.  Lots of rum.

IMG_0358

Mix it all together and put it in a contain to chill in the fridge.  I just bought this container.  I thought it was awesome until I realized its too tall to fit on any shelf in my fridge.  Its is decidedly less cool now.

Serve chilled and enjoy

This stuff is so awesome and so tasty and will make the Christmas party just that much more merry.

Merry Christmas and Happy Holidays and all of that from me to you.

What if the world doesn’t end in 16 days

Dec 5, 2012 by

The countdown is on.  No, not until you can open presents on Christmas, that may not happen this year.

According to the ol’ Mayans and their calendar the world will end on December 21st, 2012 (not sure exactly what time).

But what if it doesn’t?

Now I don’t expect the world to end on December 21st as evident by all the Christmas presents I’ve already bought, but as life has no pauses or stopping points, it’s kind of nice to use events like this to think ahead.

Much like January 1st being the start of a new year with all its new year’s resolutions, we can pause for a second and think about what the world could look like if it doesn’t end.

What do you want from the future?

What changes would you like to see or make?

What plans and dreams can you bring to fruition? What simple ways could you make your life and the life of those around you a little bit better?

If you are interested in these questions and interested in some simple things that can make your life better I hope you will join me on this journey.

Starting around Christmas and going though the new year I will be posting one simple thing each week that you can do to make your life better.

Please sign up for the email newsletter and follow me on Twitter or like me on Facebook to stay connected with TrulySimple and receive each simple, but life changing, thing each week.

These will be simple little things that will be easy to accomplish and easy to see positive results from (hopefully!).

I hope the world doesn’t end on December 21st.  I have so many great things yet to do and I hope you’ll join me in making this world a better place.
