Puerto Rican Eggnog

OK, with those disclaimers out of the way, this is a very good holiday eggnog recipe that is always a hit at parties, but in addition to all the warnings above, be careful with this one. This drink is sneaky. It looks delicious, it tastes sweet and smooth, but it will absolutely get you drunk from the first sip. I am not a big drinker, but this will get you there quickly.
Have fun, but drink responsibly. Here’s how you make it. Super simple.
This is what you will need:
- 8 3-inch cinnamon sticks
- 2 cans of coconut milk
- 3 cans of evaporated milk
- 3 cans of sweetened condensed milk
- 2 cups of water
- 6 Large egg yolks
- 3 cups of white rum
This makes a big ~4 quart big party batch size. You can cut it in half for a small party size.
Boil the water and cinnamon sticks in a 2-quart pan. You want to reduce the temperature to Medium after it has started boiling.
It will continue boiling and once it’s down to one cup of liquid, you can remove heat and the cinnamon sticks. Then let it cool to room temperature.
In a 3-quart pan, mix the egg yolk and evaporated milk with a whisk at LOW temperature. Make sure to be constantly stirring it for about 10 minutes until it thickens (you can check with a spoon, once the spoon is coated, then it’s good to go). Make sure it doesn’t boil!!! Then put it aside and let it cool slightly.
Once the cinnamon/water mixture is cool enough, add the coconut milk and mix it well.
Then take that mixture and add it to the egg/milk mixture and mix well.
Then you can add the condensed milk
Add a sprinkle of ground cinnamon now.
Stir it up for fun patterns
You get this awesome freckled texture to it.
Now its time to add the rum. Lots of rum.
Mix it all together and put it in a contain to chill in the fridge. I just bought this container. I thought it was awesome until I realized its too tall to fit on any shelf in my fridge. Its is decidedly less cool now.
Serve chilled and enjoy
This stuff is so awesome and so tasty and will make the Christmas party just that much more merry.
