Mashed cauliflower from the garden
So I had this HUGE beautiful cauliflower head growing in the garden and wanted to do something fun with it. So after a bit of digging I found some recipes for mashed cauliflower. Its a lo-carb, but high fat (lots of cheeses) version of mashed potatoes and is oh so delicious.
The recipe is very easy. You basically steam some cauliflower, throw it in a food process or blender with some cheeses and poof. You have a creamy, cheesy, awesome mashed cauliflower dish that is sure to please. Here’s how I did it.
chop up and wash your cauliflower. Steam it for about 15 – 20 minutes in a steamer. You can also boil it if you want.
then throw it in the food processor
I added 3-4 tablespoons of sour cream
then 2-3 tablespoons of Parmesan cheese
Then 2 tablespoons of cream cheese. And yes I did take this picture upside down. That’s how I roll.
And finally finished it off with the last hunk of brie I had laying around.
Process all that good stuff together and voila. You end up with a wonderful creamy and tasty dish.
