Chicken Avocado Soup that is oh so simple

If you are looking for an awesome light soup that you can eat every day for the rest of your life, this is it.

I’ve made this so many times in the past few months that I can make it in less than 20 minutes.  It’s so simple and so good.  Also if you looking for good flavorful food while on a diet, this is a winner.  My wife won her biggest loser challenge at her work eating this soup.


You will love it and want to make it over and over, so lets get making it.



  • 2 Chicken breasts
  • 1 1/2 cups green onions
  • 2 teaspoon minced garlic
  • 1 tomato, diced
  • 3 – 14.5oz cans chicken broth
  • 1/2 teaspoon cumin
  • 2 avocados, diced
  • 1/2 cup cilantro, finely chopped

lets get cooking


Get a pan on the stove and get it hot.  First secret ingredient to making this awesome is bacon grease.  You can substitute with olive oil if you don’t have any, but you should have some.  Save that gold anytime you make bacon and use it.  I’ve been cooking everything in it lately and it is amazing.  Add some to the pan and heavily salt and pepper your chicken breasts and throw them in.


In a separate pot add more bacon grease.  Yes its really that good.  Throw your garlic in there and stir.


Second secret ingredient I’ve discovered lately is green onion.  Partly because I’m a lazy gardener, I let my green onions go to seed and that caused my garden to explode with a ton of green onions.  Happy mistake.  I LOVE GREEN ONIONS NOW!  Wow these are awesome and have so much flavor.


Get your green onions and dice them up.  Throw them in a food processor for easy dicing.


Throw the onion in the pot with the garlic and bacon grease and stir.  Cook until soft and a little translucent. (few minutes on medium heat)


Chop up your tomato.  You can use canned tomatoes for this with no problems.  That is what I usually do for this soup, but just didn’t have any this time.


Throw that in and cook for a minute or so.


Add in your chicken stock.


Cumin is what makes this soup smell and taste amazing.  Bring the soup to a boil and then let simmer for 10 minutes.


When your chicken breasts are cooked, take them out and shred them with a couple forks.


Add in the shredded chicken and stir.


I also cut up the stems of the green onion for flavor and texture.  Also cut up your cilantro as well.


Stir in green onion tops


and cilantro




When you are ready to eat, dice up your avocado and add to your bowl of soup.  I usually eat a half an avocado with a bowl.

It is simply amazing and my wife keeps asking me to make it, so it must be good.

A Healthy Greek Pita

I’ve been looking to create a little healthier items in my cooking lately as sometimes the things I make, while super tasty, aren’t always the best for you. So I set out to make a nice light healthy greek pita, and it turned out awesome.


This is a very easy recipe that I modified from this one that can be made very quickly for a nice light weekday lunch or dinner.  Here’s what you’ll need to make it.


There are just a couple parts to this recipe, the marinade, the chicken and the tomato cucumber topping.

For the marinade you will need:

  • 1/2 cup yogurt
  • 2 tsp lemon juice and 2 tsp lemon zest
  • 1 to 2 garlic cloves, minced up
  • 2 tsp hot sauce
  • 2 tbsp honey
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 tsp pepper
  • pinch of salt
And here’s how you make it


In a bowl add the 1/2 cup yogurt


then add 2 teaspoons of honey


add 2 teaspoons of lemon juice


and 2 teaspoons of lemon zest


add 2 teaspoons of hot sauce.  I just used Tapatio


add 1 teaspoon dried oregano


add 1/2 teaspoon cumin, and then mix it all up.  Pour it all in a large zip lock bag, add your chicken and throw it in the fridge for an hour or so.  For this recipe I used chicken thighs.  While the chicken is marinating, lets make the rest.


For the tomato cucumber topping grab a tomato and yes, you guessed it, a cucumber and chop them up like so


throw them in a bowl with some garlic


add some dill, about a teaspoon or so


and finally drizzle with olive oil.  I did this in a tupperware container so I could put the lid on and shake it up to mix all the flavors together.


Ok, with that made its time to cook up the chicken.  I opted to just throw them on the grill, which turned out really tasty.


The marinade for this is awesome and can be used with a great number of things.  When the chicken is done, simply cut it up, stuff it in a pita and throw on the tomato cucumber mix on top.


very simple, very tasty, very healthy.

I’m intrigued by the idea of raising chickens in your backyard both for the health and fun aspects of it.  I haven’t committed to the idea yet, but this design makes me want to do it now.  Introducing the Nogg by Matthew Hayward and Nadia Turan.  The Nogg was displayed at the London Design Festival and it did not fail to capture their attention as well.

Truly Memorial Buffalo Chicken Pizza

If you want a Memorial day you will remember, make this pizza.


My wife gets all the credit for this one.  This was her idea.  She was recently dieting and was dreaming of all the wonderful things she would eat when she was finished.  This was one of those great ideas and it turned out better than we could have imagined.

This is super easy to make, and you simply  must make it.  Trust me on this one.
