Have Yourself a Merry Little Christmas

If you’ve been paying attention, the last several week’s posts have all been about adding a little holiday joy into your life.  I hope you’ve taken the time and action to do just that, but if not, its not too late.

Tomorrow is Christmas eve and as the calendar goes, Christmas the next day. You have two full days to decorate your house a little, make some Christmas cookies, and call up some friends to come over for a nice holiday get together.  Throw some Christmas music on Pandora, or watch your favorite Christmas movie with your family and friends and enjoy the moment.

The point is to have yourself a merry little Christmas.  That is all you have to do this week.

Start a New Tradition

Halloween came and went, daylight saving has robbed us of our daylight and the holidays are now upon us.  What the heck happened to October???

The holidays can bring a lot of things with it.  It can bring excitement to see friends and family.  It can signal the end of our well-intentioned diets.  It can be the anticipation of presents from the children or the dread of buying all the presents from the parents.  We all have holiday traditions.  Some we like,  some we hate, but force ourselves to get through.

This year it is time to create a new tradition.   A new simple tradition of helping others.

I started out these Truly Simple Actions each year with helping others and there is no better time than the holidays to start this tradition.

Sadly for many, this time of year can be dreadful.  With an already stretched-tight financial system, many cannot afford the things they need daily, let alone extra presents for their children.

So your Truly Simple Action for this week and new Simple holiday tradition for this year, and hopefully years to come, is to reach it out and lend a hand to those who need a little help.  If you  can afford to adopt a family who is in need then you should.  It’s just that simple.  Spread some holiday cheer this year by helping those less fortunate than yourself.

There is a great charity called Friends and Helpers who run a special Adopt A Family program for the holidays.  100% of the money you donate goes directly to the families in need.  Let me repeat that.  Every single dollar you give, goes straight to the families that need it.  That is huge.

You can adopt a stocking for $25 dollars, or adopt an entire family and really change the lives of some real people who just need a little help this year.

It is important to have some family traditions around the holidays and this year is a great time to start a new one in helping other families out.

Your Truly Simple Action this week is to help out a family that needs a little help this holiday season.

Puerto Rican Eggnog

OK, with those disclaimers out of the way, this is a very good holiday eggnog recipe that is always a hit at parties, but in addition to all the warnings above, be careful with this one. This drink is sneaky.  It looks delicious, it tastes sweet and smooth, but it will absolutely get you drunk from the first sip. I am not a big drinker, but this will get you there quickly.

Have fun, but drink responsibly.  Here’s how you make it.  Super simple.


This is what you will need:

  • 8 3-inch cinnamon sticks
  • 2 cans of coconut milk
  • 3 cans of evaporated milk
  • 3 cans of sweetened condensed milk
  • 2 cups of water
  • 6 Large egg yolks
  • 3 cups of white rum

This makes a big ~4 quart big party batch size.  You can cut it in half for a small party size.


Boil the water and cinnamon sticks in a 2-quart pan. You want to reduce the temperature to Medium after it has started boiling.


It will continue boiling and once it’s down to one cup of liquid, you can remove heat and the cinnamon sticks. Then let it cool to room temperature.


In a 3-quart pan, mix the egg yolk and evaporated milk with a whisk at LOW temperature. Make sure to be constantly stirring it for about 10 minutes until it thickens (you can check with a spoon, once the spoon is coated, then it’s good to go). Make sure it doesn’t boil!!! Then put it aside and let it cool slightly.


Once the cinnamon/water mixture is cool enough, add the coconut milk and mix it well.


Then take that mixture and add it to the egg/milk mixture and mix well.


Then you can add the condensed milk


Add a sprinkle of ground cinnamon now.


Stir it up for fun patterns


You get this awesome freckled texture to it.


Now its time to add the rum.  Lots of rum.


Mix it all together and put it in a contain to chill in the fridge.  I just bought this container.  I thought it was awesome until I realized its too tall to fit on any shelf in my fridge.  Its is decidedly less cool now.


Serve chilled and enjoy


This stuff is so awesome and so tasty and will make the Christmas party just that much more merry.
